
WHOLE ARTICHOKES
Okay so the restaurant i grew up working at, The Meeting House, used to have these bad boys on the menu and they were one of the most popular apps. This isn't the exact recipe but they're so easy and so good. They're also the perfect appetizer because they take so long to eat and don't fill you up - AND you get the added bonus of eating your portion of vegetables before the actual meal!
INGREDIENTS:
3 artichokes
1 pot of water (about a quart)
1/2 cup of white wine
2 lemons
Chopped parsley
Whatever herbs you have
Salt
Pepper
1/4 cup of mayonnaise
INSTRUCTIONS:
Place the herbs, white wine, and the juice of one lemon with salt and pepper in your pot of water. Bring to a simmer.
After washing the artichokes, trim the tough outer leaves off and chop the stem close to the base of the artichoke.
Throw the artichokes into the simmering pot, cover and cook for 30 minutes. Once you can pierce the bottom with a knife, they're done.
In the meantime, to make the aioli, mix the mayo and half a juiced lemon in a ramekin and add salt and pepper.
Plate them side up and sprinkle some chopped parsley and lemon juice on top. Serve with aioli.
