Baked Eggs with Spinach and Onion

Baked Eggs

The same egg routine can get pretty boring after a while, so why not switch it up! Baked eggs are quick and can be as simple or complicated as you'd like them to be. In this recipe, i started with sauteing onions and spinach (they are at the bottom of the ramekin so you can't see it) but you can really use whatever you want! Ham and sausage are also great additions.

Serves 1

15 Minutes

INGREDIENTS:

2 eggs

tbs of butter

a handful of spinach

a handful of chopped onion

3 tbs grated cheddar cheese

1 tbs milk

parsley or chives for sprinkling

salt & pepper

  • Preheat oven to 350F

  • Saute the onion over medium heat in a pan with butter. Once the onion is cooked through, add the spinach and cook for about 30 more seconds

  • Place the onion and spinach at the bottom of the ramekin and sprinkle half of the cheddar on top. Crack both eggs over the onion and spinach so that they are fully covered

  • Season with salt and pepper, and pour the milk over the eggs. Add remainder of the cheese on top

  • Bake for about 7 minutes. The whites should be cooked through but the yolk runny. Top with chives or parsley and enjoy!
