Shaved Brussels Sprouts with Pancetta

I know I know, I am really good at taking healthy dishes and making them... well not so healthy. But this one is worth it, I promise!

I love shaved brussels sprouts as an alternative to cooking them whole... it makes the flavor slightly milder and I just like the texture so much better. I actually buy these from Trader Joe's and they come already shredded!

If you're looking for a great recipe for Thanksgiving then give this a try. It's only 5 ingredients and you can make it in less than 20 minutes!

INGREDIENTS:

10 oz shaved Brussels sprouts

2 oz cubed pancetta

2 cloves of garlic, sliced

crumbled Gorgonzola

olive oil

salt & pepper

METHOD:

  • Heat a medium non-stick skillet with a tablespoon of olive oil and begin cooking the pancetta. Once it's crispy (about 6 minutes) remove from pan and place on a paper towel-lined dish.

  • Pour out some of the rendered fat from the pancetta, leaving enough to coat the pan evenly. Add the garlic and saute for about 30 seconds and then toss the shredded Brussels sprouts into the pan and cook for about 8 minutes - until tender. If they are too dry while cooking, add a little water or butter.

  • Remove from heat, top with crumbled Gorgonzola or blue cheese and serve warm.
