Coconut Chia Seed Pudding

Here's the perfect healthy breakfast option that you can make the night before and throw it in the fridge for the next morning. Chia seeds are incredibly nutritious and loaded with antioxidants, fiber, protein and Omega-3s. They actually have more Omega-3s than salmon!

I used coconut milk for the liquid because i love the flavor but you can use any liquid - milk, almond milk etc. Also, feel free to top with granola, nuts or any kind of fruit you like!

INGREDIENTS:

2 cups coconut milk

1/2 cup chia seeds

1/2 tsp vanilla extract

1/2 tsp honey

1/4 tsp nutmeg

raspberries

coconut flakes

METHOD:

  • Blend the coconut milk, vanilla, honey and nutmeg together until smooth. Stir in chia seeds.

  • Place mixture into a jar or container and refrigerate overnight. Top with your favorite fruit, nuts and/or granola.
