Strawberry Shortcake Cake

I had asked my friend Jacob what his favorite cake was for his 28th birthday and he said strawberry shortcake! Since strawberry shortcake isn't technically a cake, and I knew there were going to be several people eating it, I decided to make a layered cake version of it.

This is the perfect recipe for it because the yellow cake isn't as sweet as usual and it has a bit of the grainier texture like shortcake. It was so easy to make and it really looks much fancier than it is! Just good old fashioned cake, whipped cream and sweet strawberries.

So here is the recipe! Oh and that's Jacob with his birthday cake. Unfortunately i didn't have a cake stand at the time so it was presented on a plate, he seemed pretty happy about it either way!

For the cake:

1 cup (2 sticks) unsalted butter, at room temperature

2 cups granulated sugar

3 cups cake flour, sifted

1 tablespoon baking powder

1/2 teaspoon salt

1 1/4 cup milk

4 large eggs

2 teaspoons vanilla extract

coconut spray/nonstick spray

For the strawberries:

1 quart fresh strawberries, sliced

2 tablespoons granulated sugar

1 teaspoon vanilla extract

For the whipped cream:

2 cups heavy whipping cream

1/4 cup granulated sugar

1 teaspoon vanilla extract


  • Preheat oven to 350

  • Spray two 8 inch cake pans with coconut oil

  • In a bowl, beat butter and sugar with an electric mixer on high for about 3-4 minutes. In a separate bowl, combine dry ingredients - flour, baking powder and salt. In a different bowl, whisk together milk, eggs and vanilla extract. Add flour mixture to butter mixture in 3 additions, alternating with milk mixture and ending with flour mixture.

  • Pour the batter between the two cake pans and bake until they are golden, about 30-35 minutes. Remove from the oven and let cool in pan for about 10 minutes and then transfer to wire rack.

  • Cover cake with plastic wrap and refrigerate for an hour.

  • While the cake is cooling, prepare the strawberries. Mix strawberries, sugar and vanilla in a bowl and set aside.

  • To make the whipped cream, beat the heavy cream sugar and vanilla until whipped.

  • Remove the chilled cake and cut horizontally in half so that you have 4 layers. To assemble cake, begin with the first layer and cover with a cup of whipped cream and a quarter of strawberries. Repeat with remaining cake layers

  • Serve immediately. Enjoy!
