Christmas Pastries

How festive are these pastries?! I love themed-shaped food so i decided to go with Christmas tree shapes for these sweet & savory puff pastries (you know i love puff pastries).

You can really stuff these with anything you'd like! I love the Greek Spanakopita so I did a version of that. EVERYONE loves Nutella so you can't really go wrong there... am i right?

My girlfriend had a cookie decorating party so I brought these over to munch on and they were a hit. {I was also running late so I had to take a quick picture of the spinach one on that ugly plastic plate - I'm sorry I'm a terrible blogger.}

These are super easy to make and with really basic ingredients. Just make sure when you cut and twist the dough you do it gently so that it doesn't tear!

NUTELLA PASTRY INGREDIENTS:

2 sheets of puff pastry

nutella

egg wash

powdered sugar

METHOD:

  • preheat the oven to 350

  • bring the puff pastry to room temperature and roll one our at a time on a cookie sheet (lined with parchment paper)

  • spread the Nutella out on the puff pastry (generously) and top with the second piece of puff pastry

  • cut the puff pastry in a triangle, then cut the 'trunk' and 'branches' of the tree - about an 1/2 an inch for each branch

  • twist the branches so that they are slightly curved. Spread the egg wash all over the puff pastry and bake for 20-25 minutes

  • top with powdered sugar and serve warm!

SPINACH RICOTTA PASTRY INGREDIENTS:

2 sheets of puff pastry

2 tbs olive oil

2 cups frozen spinach

1 shallot, chopped

1 clove of garlic

1/2 cup ricotta

1/2 cup feta cheese

pinch of nutmeg

salt & pepper

METHOD:

  • heat olive oil in the pan and saute shallot and garlic for a minute or two. Add the frozen spinach and cook until the spinach is thawed and fully cooked, about 5 minutes. Set aside to cool

  • In a bowl, mix the ricotta, feta, nutmeg and salt and pepper. Once the spinach has cooled, add it to the cheese mixture and mix thoroughly

  • preheat the oven to 350

  • bring the puff pastry to room temperature and roll one our at a time on a cookie sheet (lined with parchment paper)

  • spoon the spinach mixture onto the puff pastry and spread evenly. Top with the second sheet of pastry

  • cut the puff pastry in a triangle, then cut the 'trunk' and 'branches' of the tree - about an an inch for each branch

  • twist the branches so that they are slightly curved. Spread the egg wash all over the puff pastry and sprinkle with sesame seeds

  • Bake for 25 minutes. Remove from oven and let cool for a few minutes. Serve warm and enjoy!
