Blistered Shishito Peppers

Happy St. Patrick's Day!! In honor of this holiday... something green! Shishito peppers are my latest obsession because A. there's only 3 ingredients in this recipe and B. they are addicting but it's okay to be addicted to a vegetable... right?

I love making these for appetizers when friends come over because eating them is like playing Russian Roulette. One out of 10 are usually very spicy while the rest are sweet! When i'm by myself I usually eat the whole bag and there's a weird pleasure I get from waiting for the spicy ones. I know, I'm weird.

Shishito peppers have been popping up all over new trendy restaurants, but i think they usually fry them. Blistering them on the stove top is just as good and I actually love the blistered flavor.

So 3 ingredients: Shishito peppers, fresh lime juice, SEA SALT. So, so simple and they are so delicious. Comment below and let me know what you think!

INGREDIENTS

1 pack of Shishito peppers

1 lemon/lime

a big pinch of sea salt

METHOD

  • Heat a heavy bottom skillet on medium-high heat. Once it's hot, pour a dash of oil in (olive oil or canola) and once hot, add peppers.

  • Cook on medium to high heat until the peppers are blistered. Serve with fresh lime juice and sea salt.

  • Enjoy!
