I had no idea what to call this thing but as you can tell, it makes for a great party dish! With the spinach and feta, it's basically the Greek dish 'Spanakopita' except that I also added Ricotta because I needed to have at least one Italian ingredient in there!

I am a HUGE fan of puff pastry. There are so many different ways to use it and I actually love using it for savory dishes even more than sweets. Unless of course there's Nutella involved - that usually trumps everything. (Speaking of which, check out my Christmas pastry trees if you like Nutella + Puff pastry).

This was my contribution for Easter Sunday, which I spent at Al's family's house. It was perfect because everyone can just grab a 'ray'. Al's Aunt made my Herb Crusted Rack of Lamb as the main entree, which was delicious! I think it was actually better than the one I made!

SPINACH RICOTTA PASTRY INGREDIENTS:
2 sheets of puff pastry
2 tbs olive oil
2 cups frozen spinach
1 shallot, chopped
1 clove of garlic
1/2 cup ricotta
1/2 cup feta cheese
pinch of nutmeg
salt & pepper
METHOD:
Heat olive oil in the pan and saute shallot and garlic for a minute or two. Add the frozen spinach and cook until the spinach is thawed and fully cooked, about 5 minutes. Set aside to cool
In a bowl, mix the ricotta, feta, nutmeg and salt and pepper. Once the spinach has cooled, add it to the cheese mixture and mix thoroughly
Preheat the oven to 350
Bring the puff pastry to room temperature and roll one out at a time on a cookie sheet (lined with parchment paper)
Spoon the spinach mixture onto the puff pastry and spread evenly into two circles (like above image). Top with the second sheet of pastry
Cut the puff pastry in a circle framing the stuffing. Using a fork, attach the borders. Cut the border into 3 cm slices and then twist each slice about 90 degrees. Spread the egg wash all over the puff pastry and sprinkle with sesame seeds
Bake for 25 minutes. Remove from oven and let cool for a few minutes.
Serve warm and enjoy!
